Coeliac disease affects roughly one person in a hundred in Turkey, and for them a gluten-free diet is not a preference but the treatment itself. This section does not say "it can be made gluten-free": it says which dishes already are, which become so with one change, and which never will.

The science

Gluten is the elastic web that gliadin and glutenin, the proteins in wheat, barley and rye, form when they meet water. In coeliac disease the problem is not flavour but immunity: gliadin triggers an immune response against the villi of the small intestine and absorption fails. The threshold is very low — the international standard for "gluten-free" is 20 parts per million, so even a stray pinch of flour in a pan counts.

Shop-bought tomato paste, yeast, baking powder and some molasses carry a real risk of wheat contact during processing, so the label matters. In Turkish cooking the genuinely hidden sources are: yufka, erişte, tarhana (most are wheat based), the breadcrumb in köfte, the flour thickening a soup, stock cubes, soy sauce, beer, and frying oil that has already fried something floured.

What replaces it, and what that costs you

Flour, for thickening Corn starch or rice flour

Starch binds more strongly and more clearly: use half as much, but expect it to set firmer as it cools.

Flour, for dough Rice flour + starch + psyllium or xanthan

Without gluten there is no net to hold the gas. Psyllium or xanthan takes over that job; without one the dough falls apart and the bread crumbles.

Bulgur Buckwheat, millet, quinoa or rice

Buckwheat, despite the name, is not wheat and contains no gluten; it is the closest stand-in for bulgur in a kısır.

Pasta Lentil, chickpea or corn pasta

Pulse pastas break down faster: taste two minutes before the packet says, and always keep the cooking water.

Breadcrumbs Cornmeal, crushed rice flakes or ground hazelnut

Ground hazelnut both binds and browns, but it never goes on a table where someone has a nut allergy.

Kitchen rule Cross-contamination is a real risk: shared pasta water, a shared board, a shared toaster or shared frying oil is enough. Cook the gluten-free food first, stir it with its own spoon and drain it in its own colander.
