The mechanism that defines it

The aubergine is crushed with the yoghurt while still warm — warm enough to loosen the purée, not warm enough to break the yoghurt. Since acid-set casein expels water and clumps when heated, that temperature window is the whole trick.

  1. Char the aubergines directly over embers or flame until the skins are completely black.

  2. Peel them and chop the flesh roughly with a knife — never blend it.

    Why A blender shreds the cell walls and turns the aubergine into a gluey purée.
  3. Fold the chopped aubergine into garlicky strained yoghurt and season it.

  4. Sear the diced lamb hard in its own fat.

  5. Spread the aubergine on the plate, pile the lamb on it and pour sizzled butter over.
