What it is for
They do more than sweeten: they bind moisture, raise the boiling point and produce colour and crust. A jam sets and keeps because of sugar.
Where it catches you out
Each sugar browns at its own temperature. Sucrose at 160 °C, the fructose in honey and molasses at 110 — anything with honey burns sooner.

Carob flour and carob pekmez are different products; in particular, do not copy fibre values from flour.

Keeping it
Keep the unopened jar in a cool, dark place for 1 year; after opening, refrigerate for 6 months.
Cross-contamination risk
Carob is gluten-free; additives and shared-line information in commercial pekmez must be verified on the label.
