Mutfaksim is not a recipe site. It is a kitchen simulation: it works out what ingredients, heat and time do when they meet, and explains the result in terms of taste, texture, structure, nutrition and safety. Recipes are what goes into that engine and what comes out of it, not the product itself.

Where the name comes from

Mutfak, Turkish for kitchen, plus simulation. Run it before you light the hob.

A number under every answer

"Cook on a medium heat" is not a technique. The oil has to sit between 170 and 190 °C; below 170 the food drinks the oil, because the water at its surface cannot flash to steam and push outward, so the shield that keeps the fat out never forms. Every page here is built on that difference.

But a number being written down is not the same as a number being checked. Where each value stands is set out on the Sources and method page — none of the cooking thresholds has been verified yet, and saying so is better than not saying so.

Two languages, one set of data

The site is thought and written in Turkish, and the English is an equivalent rather than a translation. Both are two faces of the same record, so a number that changes changes in both at once: neither can fall behind the other.

The imagery

Every photograph and every short clip on this site was produced for it. There is no stock imagery. A clip on a card is generated from the still shipping beside it, so frame zero and the photograph are the same picture and the card looks unchanged when the clip ends.
