Terbiye — tempering a sauce
Yoghurt tipped into boiling soup splits. Terbiye brings the pot to the yoghurt instead of the yoghurt to the pot: hot liquid goes in a ladle at a time, so the temperature climbs slowly.
The mechanism
Casein micelles are already fragile under acid; a sudden rise in heat changes their charge, they clump and they let go of the water they were holding. That separation does not reverse. The flour and egg yolk in a terbiye do two jobs: starch granules swell and get between the casein particles so they cannot collide, and lecithin holds the fat and water interface. Together they push the splitting threshold up without removing it — a soup taken past 85 °C still splits, just later.
The thresholds that define it
“Medium heat” is not a technique. Every line below is a point where something starts or stops.
- 85 °C Where the casein splits. Terbiye delays this; it does not remove it.
- 62 °C The starch in the flour begins to gelatinise here and builds the protective net.
- 65 °C The yolk begins to thicken; past this, do not stop stirring.
How to read it by hand
Dip a ladle and lift it: when a thin coat stays on the back and a finger drawn through it leaves a line that does not close, the body is there. By the time you see a boiling bubble you are already late.

The yoghurt reached 85 °C. The casein clumped and released its water, and that does not come back.
What to do
Next time add the terbiye off the heat. To rescue what you have, blend it: the grain goes, the texture does not come all the way back.

Why
The temperature gap was too wide. Cold yoghurt meeting boiling liquid sets the casein at the edge instantly.
What to do
Add the hot liquid to the yoghurt a ladle at a time, not the other way round. At least five ladles, whisking between each.
03 No body at all; it stayed like water ⌄
Why
The flour never gelatinised. If the pot never reached 62 °C after the terbiye went in, the starch stays asleep.
What to do
Keep it on a low heat, stirring, for a few minutes after the terbiye goes in. Do not boil: warm it while staying under 85.
Where it comes from
Terbiye is Turkish cooking’s answer to the yoghurt problem, and it appears under that name in Ottoman palace kitchen records. Yoghurt splitting in the pot was a problem known everywhere in Anatolia, and the answer came along two lines. Terbiye is one. The other is tutmaç: never put the yoghurt in the pot at all, pour it over at the table — older, simpler, and it never fails.

Giving the heat another way
Deep frying
Surface water flashes to steam and pushes outward — that is the shield keeping oil out. Cold oil never builds it, and the food drinks the fat instead.
The oven
Air carries heat badly, so a 200 °C oven does not make 200 °C food. The inside stays where water boils, at 100 °C.
Boiling & poaching
Water cannot pass 100 °C, so turning the flame up changes nothing. Boiling is set by time and salt, not by temperature.
