Embers deliver heat by radiation and the surface passes 200 °C in seconds. Smoke phenols bind to the meat, and that is where the flavour comes from.

What is happening

The mechanism

Most of the heat at a grill arrives as infrared radiation from the embers, not through the air. Radiation falls off with the square of the distance: moving the meat twice as close makes it four times hotter, which is why the real control is height rather than fire. The surface passes 200 °C within seconds, and Maillard followed by pyrolysis builds that particular crust. Flame is not heat but damage: dripping fat that ignites leaves soot and polycyclic aromatic hydrocarbons on the surface — the taste of smoke gone wrong. A good grill is flameless, ember-fed and patient.

The numbers

The thresholds that define it

“Medium heat” is not a technique. Every line below is a point where something starts or stops.

  1. 140 °C The Maillard line, where the taste of the crust begins.
  2. 52 / 57 / 63 °C Internal temperatures for red meat: rare, medium rare, medium. Ten degrees apart, not minutes.
  3. 74 °C The safe internal temperature for chicken. Judge it by this number, never by colour.
  4. 200–250 °C The working surface temperature of the embers. Below it meat cooks but takes no crust.
  5. 300 °C üstü The scorch zone: the crust turns bitter and PAHs build up fast.
Without a thermometer

How to read it by hand

Hold your hand at grill height, ten centimetres above the embers, and count. Pulling it away at three seconds is high heat — for köfte and thin cuts. Five or six seconds is medium, which is what chicken and thick pieces want. Ten seconds means the embers have died. For doneness, press the pad below your thumb: slack is rare, slight resistance is medium, firm is well done.

Fuel

What you are burning

Fuel does not only give heat, it decides how the heat travels. Charcoal radiates, gas blows hot air, and at the same temperature they will not build the same crust. The first two belong outdoors, the last two work on a balcony or in a kitchen.

Wood burned without oxygen until its volatiles are gone. What is left is close to pure carbon, so it burns without flame and gives its heat as radiation — which is exactly what a grill wants.

WhenThe default. Oak and hornbeam burn longest; fruitwood charcoal lights faster but dies sooner.

Watch outBriquettes contain a binder and spend their first ten minutes burning it off. Meat that goes on during those minutes takes the taste with it: put nothing on until the ash has gone completely grey.

Wood gives up its water first, its volatile compounds second and its carbon last. The aroma comes from that second stage and the embers from the third; you cannot have both at once, they arrive in order.

WhenWhen you want the aroma. Oak is heavy and smoky, beech balanced, apple and cherry sweet and light. Never pine, spruce or eucalyptus: their resins leave bitter soot on the meat.

Watch outNothing cooks over flaming wood. You wait until the fire has collapsed into embers — flame does not cook, it soots.

It delivers heat mostly through hot air rather than radiation. Which is why, even at the same temperature, it builds a crust more slowly than charcoal: the difference is not the temperature but how the heat travels.

WhenWhen you want control and speed. Being able to set the temperature with a dial makes two-zone cooking far easier than it is with charcoal.

Watch outIt gives no smoke aroma. If you want some, wrap dry wood chips in pierced foil over the burner — soaked chips make steam, not smoke.

An element heats, nothing drips, nothing smokes. It passes the 140 °C that Maillard needs comfortably, but never approaches the 300 °C surface of embers: you get crust, never char.

WhenWhen the balcony is off limits, when you live in a flat, when it is winter. A cast iron grill pan does the same job and marks better.

Watch outNever put wet meat on it. The surface water has to boil off first, the grate cools while it does, and the meat steams instead of searing.

Lighting it

How the embers are built

All four end in the same place: nothing goes on the fire until the coals have turned completely grey. What differs is how long that takes, and what it leaves on the meat.

15–20 minutes

Chimney starter

Fill the metal chimney with charcoal, put crumpled newspaper underneath and light it. The chimney works as a chimney does: air enters at the bottom, heats, rises and makes its own draught, and the charcoal lights upward.

The fastest and cleanest method, because it uses no chemical starter and lights the whole load evenly. Tip it out when the top coals have turned grey.

10–15 minutes

Pine cones

Stack dry cones in a pyramid in the middle of the grill, lean the charcoal around them and light it at a couple of points.

Cones are resinous, so they burn fast and tall, and their open structure passes air the way a chimney does. The resin feeds the fire without reaching the meat: the cones are gone before the charcoal is lit, leaving ash. They start the fire; nothing is cooked over them.

20–30 minutes

Newspaper and kindling

Twist the newspaper into tight sticks, lay thin kindling over them and the charcoal on top. Loosely crumpled paper is gone in seconds and lights nothing.

The slowest method, and the one you can always improvise. Never glossy magazine paper: its ink and coating leave a chemical taste as they burn.

Fifteen minutes

Lighter fluid

Pour it over the charcoal, give it two minutes to soak in and light it. Never add it to a lit fire.

It works, but it is not recommended: meat that goes on before the fluid has fully burned tastes of it. If you use it, wait until the flames are out and the coals are wholly grey — which takes as long as a chimney would, so nothing is gained.

Distance

Height is the real dial

Radiation falls off with the square of the distance: moving the meat twice as close makes it four times hotter, not twice. The real control on a grill is height, not fire.

  1. 5–8 cm hand test: 2–3 seconds
    Thin köfte, wings, vegetables: anything that wants a fast crust.
  2. 10–12 cm hand test: 4–5 seconds
    Şiş, chicken thighs, fish: where crust and interior finish together.
  3. 15–20 cm hand test: 6–8 seconds
    Thick steak, whole chicken, ribs: long and low.
  4. Yan ateş hand test: 10 seconds or more
    The resting and holding zone, with the embers beside rather than under.

Which cut, at what temperature

Internal temperature is the only reliable measure: time is an estimate and colour lies. Meat carries on rising 2–5 °C after it comes off, so it is pulled a little under the target.

The three mistakes people make

01 Charred outside, raw inside
Why

The meat sat too close: radiation heats the surface far faster than the middle.

What to do

Raise the grill, or push some embers aside for a two-zone fire: colour it over the hot side, then finish it over the cool side under a lid.

02 The meat stuck and tore when turned
Why

The grate was cold or dirty. Protein bonds directly to metal that is not hot enough.

What to do

Heat the grate over the embers before anything touches it and wipe the bars with an onion or an oiled cloth. Then wait: meat releases itself when the crust is ready.

03 It flared up and everything tastes of soot
Why

Dripping fat caught. Flame does not cook; it deposits soot.

What to do

Cook fatty pieces beside the embers rather than over them, and lift the meat when it flares. Never splash water: the steam throws ash upward.

History

Where it comes from

The mangal is the urban continuation of the oldest way to cook meat. Across Anatolia the technique splits by region: Adana defines its mince by fat ratio, Urfa by heat, and Erzurum’s cağ kebabı threads the meat horizontally and takes the fire from the side — even the direction of the radiation is a local decision. What they share is embers, not flame. Turning the skewer is technical too: a fixed surface takes heat from one side and dries there, while turning evens it out and keeps the escaping juices on the surface.
