Toyga soup
A thicker, more archaic cousin of yayla çorbası: hulled wheat instead of rice, strained yoghurt instead of plain. A hospitality dish made in big pots at religious holidays, eaten hot or cold.
Using strained yoghurt genuinely raises heat tolerance: with higher solids and fat there is less free whey to expel and more physical separation between protein aggregates. The Afyon version’s clotted cream pushes that protection further still.

Dairy: it brings creaminess, protein and calcium.
Temper it with a few spoons of the hot liquid before it goes in; added straight, it splits.

Gives body: the bulk of the plate and its starch.
A pinch of soda in the soaking water: the alkaline bath dissolves the skins and nearly halves the cooking time.

Binds: it builds the structure and holds the water.
Sifting does not remove lumps, it aerates: the same weight takes more space. Weigh it, never scoop it.

Crack it on a flat surface, not the rim of the bowl: a sharp edge drives shell into the egg.

How it is made

Soak the hulled wheat overnight, then simmer it for 45 to 60 minutes until tender.

Whisk strained yoghurt, egg and flour, and temper it with the wheat’s cooking liquid in stages.
