Kısır
It never meets a flame: fine bulgur swells by itself in boiling water. The pomegranate molasses and lemon go in after the swelling is over.

Kısır belongs to the southeast and the Mediterranean coast, and it is less a dish than a way of gathering: women’s afternoons, holiday tables, picnics. That is why it is wrapped in a lettuce leaf and eaten with the hand. The recipe shifts from place to place — pomegranate molasses dominates in Antakya, tomato and pepper paste in Mersin, heat in Adana — but the skeleton is the same: fine bulgur, paste, greens, acid. Its Levantine relative is tabbouleh, where the proportions invert: bulgur in the minority and parsley in the majority.
Method
- Boil the water: warm water does not swell fine bulgur evenly.
- Chop the greens finely but keep them aside until the bulgur has swollen: greens that meet salt release their water.

Pour the boiling water over the fine bulgur, stir, cover it and leave it twenty-five to thirty minutes.
Look for After thirty minutes there should be no free water in the bowl, and the bulgur should crumble in the hand.
Why Bulgur is wheat that has already been boiled: it needs to take up water rather than cook, and the heat of the boiling water is enough. No flame is required. Fine bulgur absorbs faster than coarse and takes up excess just as fast, which is why the ratio is 1:1.2, lower than for a pilaf.If it went wrong
If water is left, cover the bowl with a clean cloth for ten more minutes and the cloth will take it up. If the bulgur is still hard, add another 50 ml of boiling water — cold water does not work.

Add the paste and the olive oil and work them through with your hands for five minutes.

Add the pomegranate molasses, lemon juice, salt, cumin and chilli, and mix again.

After the heat goes off

The chilli and the pomegranate molasses can be harsh for a small child: lift their portion once the paste and oil are in, before the acid and the heat. For 12–36 months the bulgur is soft enough as it is. Not suitable for a baby under one, because of the salt and the molasses. It contains gluten.
