What it is for

They set the balance. Acid cuts fat, reins in sweetness, denatures protein and triggers leaveners. When a dish tastes like something is missing, it is usually acid rather than salt.

Where it catches you out

Heat drives the aroma out of acid. Squeeze the lemon at the table, not into the pot, and add vinegar at the end.

The knack

Roll it on the counter before juicing: the cell walls break and the same lemon gives noticeably more juice.

Keeping it

A week at room temperature, or 3-4 weeks bagged in the fridge; the juice keeps 2-3 days refrigerated and four months frozen.

Gluten-free

Lemon is naturally gluten-free.

Glycaemic index

This ingredient carries no meaningful carbohydrate, so it has no glycaemic index. On its own it will not move blood sugar; what you eat alongside it decides that.

"They go well together" is not an explanation. Every pairing below has a chemical or structural mechanism under it.

Fish

Citric acid protonates trimethylamine into the trimethylammonium ion, an ionic salt with far lower vapour pressure. The fishy molecule is still there; it simply can no longer reach your nose.

Lentil

Ascorbate reduces Fe³⁺ to the more soluble Fe²⁺ and forms a soluble chelate that shields the iron from phytate and polyphenols, raising non-heme iron absorption roughly two- to sixfold.

Tahini

Acid plus water breaks the continuous sesame-oil phase and inverts it into an oil-in-water emulsion. That inversion is why tahini seizes and then suddenly turns pale and pourable.

Milk

In a hot sauce it drives the pH toward casein’s isoelectric point of 4.6 and collapses the micelles into curds.

Spinach

Held after dressing, acid displaces magnesium from chlorophyll and turns greens olive-drab.

Nutritionally

The vitamin C in a squeeze of lemon is nutritionally minor; its kitchen importance is enhancing iron absorption at the same meal, and 25–50 mg is enough to matter.
