Black-eyed peas are the light pulse of the Aegean and Mediterranean kitchens, and one property separates them from the rest: they need no soaking. The skin is about half the thickness of a white bean’s and water reaches the centre in ten minutes rather than forty. That makes them the one dried pulse you can decide on after you get home.

- Rinse the peas; no soaking needed.

Boil the peas in unsalted water for twenty-two to twenty-five minutes, until soft.
Look for Soft with the skins intact: in a salad they have to stay whole.

Drain them and dress them HOT with the oil, lemon, crushed garlic, sumac and salt; leave twenty minutes.
