Where this dish comes from

Black-eyed peas are the light pulse of the Aegean and Mediterranean kitchens, and one property separates them from the rest: they need no soaking. The skin is about half the thickness of a white bean’s and water reaches the centre in ten minutes rather than forty. That makes them the one dried pulse you can decide on after you get home.

Method

Before the heat goes on
  • Rinse the peas; no soaking needed.
  • Shake the dressing together in a jar.

You will need: A pan · A wide bowl

  1. Boil the peas in unsalted water for twenty-two to twenty-five minutes, until soft.

    Look for Soft with the skins intact: in a salad they have to stay whole.

    Why The same pectin rule again: salt and acid firm the skin. The pea’s skin is thin so the time is short, but the rule does not change.
    If it went wrong

    If they have collapsed there is no salad but there is a purée: blend them with the oil, lemon and garlic and serve it as a meze.

  2. Drain them and dress them HOT with the oil, lemon, crushed garlic, sumac and salt; leave twenty minutes.

    Why The starch gel of a hot pulse is loose and takes the dressing in — the same rule as in a piyaz. Dressed cold, the pea carries its flavour only on the surface.

  3. Once it has cooled to warm, fold in the onion, tomato, pepper and parsley.
