What it is for

Heat unfolds them and they link to each other: they bind, they firm, they build crust. They are one half of the Maillard reaction; sugar is the other.

Where it catches you out

Every protein has its own threshold and none of them are reversible. Egg turns at 82 °C, meat at 70, fish at 55 — once past, there is no coming back.

The knack

A pinch of soda in the soaking water: the alkaline bath dissolves the skins and nearly halves the cooking time.

Keeping it

Dried chickpeas keep airtight for a year; cooked, they keep four days refrigerated in their liquid and three months frozen.

Chickpeas are naturally gluten-free.

Glycaemic index

31 — glucose is taken as 100. Below 55 is low, 56–69 medium, 70 and above high. The number says nothing about portion: at the same index, twice the amount is twice the load.

Tahini

The acid and added water invert the sesame emulsion, and the resulting oil-in-water system carries and stabilises the chickpea starch and protein. Hummus is an emulsion, not a mash.

Baking soda

Alkaline conditions drive β-elimination of pectin in the cell wall and weaken the seed-coat hemicellulose, so cooking time falls dramatically and the skins slip. That, not the blender, is what makes hummus smooth.

Chickpeas are lysine-rich and methionine-limited while sesame is methionine-rich, so hummus is a near-complete protein — one of the few traditional pairings that genuinely completes an amino acid profile.
