A dry starch-and-protein layer reaches Maillard temperatures fast while insulating the delicate muscle beneath, which sets at only 50–60 °C.
Heat unfolds them and they link to each other: they bind, they firm, they build crust. They are one half of the Maillard reaction; sugar is the other.
