What it is for

They make gas and aerate the dough. Soda works the instant it meets acid; yeast takes hours. They are not interchangeable.

Where it catches you out

Soda does nothing without acid, and the excess tastes of soap. Yeast dies at 55 °C — test the water on your wrist.

The knack

A teaspoon is about 4 g, and it always needs an acid beside it; without one it leaves a soapy taste.

Keeping it

Airtight and dry for two years; to test it, drop vinegar on a pinch — if it does not fizz enthusiastically, throw it out.

Gluten-free

Sodium bicarbonate is a mineral salt with no relationship to any grain.

Glycaemic index

This ingredient carries no meaningful carbohydrate, so it has no glycaemic index. On its own it will not move blood sugar; what you eat alongside it decides that.

Chickpea

Alkaline β-elimination cleaves pectin’s glycosidic backbone and weakens the seed-coat hemicellulose, cutting cooking time from about two hours to 45–60 minutes and loosening the skins.

Lemon

Straightforward acid-base: NaHCO₃ + H⁺ → CO₂ + H₂O + Na⁺, and that CO₂ is the leavening.

What it fights with

Pomegranate

Alkali converts red flavylium cations to blue-grey quinoidal bases and then degrades them. The same holds for sumac, strawberry and aubergine skin.

Spinach

It keeps the colour vividly green but destroys thiamine and vitamin C and turns the texture mushy — a real trade-off, not a free win.

Sodyum bikarbonat
Decomposes on heating into sodium carbonate, CO₂ and water, and reacts instantly with any acid — so an acid-leavened batter must go into the oven promptly.
Nutritionally

Baking soda meaningfully accelerates the loss of thiamine and vitamin C from vegetables and pulses. That is the cost of the speed and the colour.
