Turkish potato salad

No mayonnaise, just olive oil and lemon. The potatoes are dressed while hot (about 60 °C): warm potato draws the dressing in and cold potato does not.

Where this dish comes from

Turkish potato salad is a different plate from the mayonnaise salads of Europe: olive oil, lemon, spring onion, parsley, dill and chilli flakes. It is the one in the picnic basket, at afternoon tea and on the holiday table. It is eaten cold, but its taste is decided while the potatoes are still hot.

Method

Before the heat goes on
  • Wash the potatoes and leave them whole, in their skins, and of a similar size.
  • Make the dressing first, so it can go on the moment the potatoes are drained.

You will need: A pan · A knife · A wide bowl

  1. Put the potatoes in their skins into cold water, bring to the boil and cook for 20 to 25 minutes, until a knife slides into the middle without resistance.

    Look for The knife tip should slide to the centre; the skins should not be splitting.

    Why Starting from cold, the outside and inside heat at the same pace. Dropped into boiling water, a potato falls apart outside while the middle stays raw. The skin limits how much water it takes up and keeps it from going soggy.

    Starch gelatinised The granules soaked up water, swelled and burst into a network. It has thickened, and it will firm further as it cools. no way back

    Too much starch. It will set into a rubbery gel once cool — add more liquid.

  2. Drain them, and once they are cool enough to handle (about 60 °C) peel them and cut them into 2 cm cubes.

  3. At once, toss the warm potatoes with the olive oil, lemon juice, salt, cumin and chilli flakes; leave them to cool for 20 minutes.

    Look for After 20 minutes no dressing should be left in the bottom of the bowl, and the potatoes should be yellowish and glossy.

    Why As warm potato cools its gelatinised starch contracts and pulls the dressing in; potato that has already cooled holds dressing only on its surface and the inside stays bland. That is also why the salt goes in now.
    If it went wrong

    If the potatoes were dressed cold, warm them for a minute in the microwave, toss again and let them stand for 10 minutes.

  4. Once they are at room temperature, add the spring onion, parsley and dill and fold them in gently.
