Vermicelli soup

Where this dish comes from

This is the soup made in Turkey when a child is ill, when nobody has an appetite, and when there is no strength left to cook anything. Its plainness is a design rather than a shortcoming: there is no fat, fibre or spice in it to trouble a stomach. And the smell of vermicelli toasting in butter is Maillard at its plainest — four ingredients do not otherwise produce that much flavour.

Method

Before the heat goes on
  • Boil the water separately: it goes onto the toasted vermicelli hot.

You will need: A pan

  1. Melt the butter and toast the vermicelli over a low flame for four or five minutes, until golden.

    Look for The colour wants to be a light hazel; dark brown turns bitter. It is ready when you can smell it.

    Why The starch and protein in vermicelli meet in a Maillard reaction above 140 °C, and that is where the toasted smell and the nutty taste come from. Untoasted, it gives the soup body and nothing else.
    If it went wrong

    If it has darkened, do not add the water — start again. The bitterness of burnt starch does not disappear even in a litre of water.

  2. Add the tomato paste and stir it for one minute more.

  3. Pour in the HOT water, add the salt and boil seven minutes.

Crack an egg into the thickened leftovers and it becomes a sort of vermicelli omelette: three minutes in a pan.

For a child

The classic children’s soup and rightly so: soft, unspiced, familiar. For 12–36 months lift their share before the salt. For a baby under one make it without salt or paste and cook the vermicelli a little longer to soften it.
