A güveç works with chicken as it does with lamb, but the times are quite different: where lamb wants two hours, chicken thigh is done in forty minutes. The reason is how much collagen there is — poultry connective tissue is both less abundant and easier to dissolve than a mammal’s. Which makes chicken güveç a weeknight and lamb güveç a Sunday.
Method
- Heat the oven to 190 °C.
- Dry the chicken and cut it into large pieces.

Add the vegetables, garlic, thyme, salt and hot water to the dish; cover and bake thirty-five minutes at 190 °C.
Look for A knife should meet no resistance in the potato and the chicken come away from the bone.

Take the lid off for ten minutes more, until the top colours, and rest it ten.

What happened
The meat passed 70 °C. Past that point the muscle fibres contract and wring out their water, while collagen never gets the time to turn into gelatine. It loses moisture and never tenderises.
By the numbers
Beef medium at 57 °C, chicken at 74 °C. Rest it for 10 minutes off the heat; unrested meat leaves its juice on the plate.
Without a thermometer
The palm test: touch thumb to index finger and press the pad below your thumb — that firmness is rare. Middle finger is medium, ring finger is well done. Watch the juice too: pinkish and clear means you are there, running white means you went too far.
After the heat goes off
To the table in its dish, with rice or bread.
Three days in the fridge and better on the second.
Fifteen minutes covered at 180 °C.
Three months, and taking the potato out first preserves the texture.
The leftover chicken, shredded, becomes a börek filling, a salad or a pasta sauce, and the sauce goes over rice.
