Where this dish comes from

Oturtma is a family of bakes where the vegetable is "seated" in the tray: potato, aubergine or courgette below and mince above. The problem with potato is its starch: cooked raw in sauce it leaks starch into the sauce, which pastes while the potato is still firm. A pre-fry sets a starch gel on the surface that stops both the leaking and the collapse.

Method

Before the heat goes on
  • Slice the potatoes 5 mm thick and stand them five minutes in cold water: the surface starch washes off and the slices do not stick together.
  • Dry them, and heat the oven to 200 °C.

You will need: An oven dish · A wide pan

  1. Fry the potato slices three minutes a side until the edges colour, and drain them.

    Look for Golden at the edges with the middles still firm: there are thirty-five minutes to come.

    Why The pre-fry sets a starch gel on the surface, which stops both the slice disintegrating in the sauce and the starch leaking out and pasting it.
    If it went wrong

    If you skipped the pre-fry, boil the slices five minutes: a weaker gel, but it saves the sauce.

  2. Brown the onion six minutes and the mince eight in the same pan; fry the paste for one and add half the salt.

  3. Lay the potatoes in the dish, spread the mince over, arrange the tomato and peppers, pour the hot water down the side and add the rest of the salt.

  4. Bake thirty-five minutes at 200 °C and rest it ten.

    Look for A browned top, sauce bubbling at the edges, and a knife meeting no resistance in the potato.
