Albanian liver

Liver must not meet salt before the pan, and must meet flour a minute before it. Two rules, two minutes.

Where this dish comes from

A meze with an Albanian name that took its shape in the taverns of Istanbul. Liver goes tough for almost always the same reason: salting it early. Salt draws the cell water out by osmosis, the surface wets, the pan stews instead of searing, and the protein contracts at the same time. The second reason is time — liver cooks in two minutes and turns grainy in the third.

Method

Before the heat goes on
  • Cut the liver into 1.5 cm cubes, remove the membrane and dry it on paper.
  • Slice the onion into fine rings, rub it with salt, leave ten minutes and squeeze it dry: that takes the bite out of the salad.
  • Put the flour on a wide plate, but do not coat the liver yet.

You will need: A deep pan · A sieve · Kitchen paper

  1. Bring the oil to 180 °C.

    Look for A pinch of flour should sizzle and rise to the surface at once.

    Why The liver has two minutes, so the oil must stay above 160 °C the moment it goes in; cold oil poaches it and turns the flour to paste.

  2. Coat the liver in flour ONLY AS IT GOES INTO THE PAN, shake the excess off and drop it in.

    Look for The flour should sit as a fine dry dust; damp patches mean it waited.

    If it went wrong

    If the flour has gone pasty, shake it off in a sieve and coat it again with dry flour. Pasty flour will certainly come off in the pan.

    Starch still asleep The granules are just floating there doing nothing. No body arrives before 62 °C.

  3. Fry for TWO MINUTES, lift them out with a slotted spoon onto paper, and salt them ONLY NOW.

    Look for Cut open, the middle should be faintly pink. Grey and dry means overcooked.

    Why Liver protein coagulates around 60 °C, and a 1.5 cm cube gets there in two minutes. In the third the fibres contract, give up all their water and the texture goes to sand. The salt is late for the same reason: early, it causes that same water loss before any cooking.
    If it went wrong

    Overcooked, the texture does not come back. Serve that batch with plenty of sumac onion and parsley: the acid and moisture cover the dryness to a degree.

    Starch gelatinised The granules soaked up water, swelled and burst into a network. It has thickened, and it will firm further as it cools. no way back

  4. Toss the squeezed onion with the parsley, sumac and chilli, and serve it beside the liver.

    Look for The onion rings should be softened but still crisp, with sumac touching every one.

    Why Sumac brings acid and acid cuts fat; the same acid balances the iron taste of the liver. This salad is not a garnish but the other half of the plate.

What can go wrong here

What happened

The meat passed 70 °C. Past that point the muscle fibres contract and wring out their water, while collagen never gets the time to turn into gelatine. It loses moisture and never tenderises.

By the numbers

Beef medium at 57 °C, chicken at 74 °C. Rest it for 10 minutes off the heat; unrested meat leaves its juice on the plate.

Without a thermometer

The palm test: touch thumb to index finger and press the pad below your thumb — that firmness is rare. Middle finger is medium, ring finger is well done. Watch the juice too: pinkish and clear means you are there, running white means you went too far.

Serving

Hot liver and cold salad on the same plate. Tavern-style, in small portions, with bread.

One day in the fridge. Cooked liver firms up quickly and wants eating the same day.

Cooling and reheating

Do not reheat it: reheated liver certainly goes grainy, and it is better cold.

Does not freeze

Not once cooked. Raw liver keeps three months.

What is left

Chopped fine into a salad, or eaten in bread with the sumac onion.

For a child

Liver is rich in iron and can be given to a baby from eight months, though not in this fried form. For a child: cook a piece without flour in a little fat for two minutes and mash it. For 12–36 months leave out the chilli and sumac. Liver is very dense in vitamin A, and more than one portion a week is not advised.
