Where this dish comes from

A meatball from the Ottoman palace kitchen, named for its shape. What is technically interesting is the use of two minces: the cooked one has already coagulated and so binds nothing while giving bulk, and the raw one’s myosin dissolves under kneading and does the binding. The rice starch is a third binder. All three together give a meatball that, egged and fried, does not fall apart.

Method

Before the heat goes on
  • Boil the rice to a soft porridge and cool it.
  • Fry half the mince with the onion and cool it completely: warm mince cooks the raw half.

  1. Fry half the mince with the onion for ten minutes and cool it completely.

    Look for The cooked mince should feel at room temperature to the hand.

    Why The cooling matters: warm mince partly coagulates the raw mince’s protein and destroys the very binding it was there for.
    If it went wrong

    In a hurry, spread the cooked mince on a tray and give it ten minutes in the fridge: kneaded warm, the mixture will certainly fall apart.

    Starch gelatinised The granules soaked up water, swelled and burst into a network. It has thickened, and it will firm further as it cools. no way back

  2. Knead the cooled cooked mince, the raw mince, the rice, one egg, the parsley, salt and pepper for five minutes; rest twenty minutes in the fridge.

    Why Three binders work together: the dissolved myosin of the raw mince, the gelatinised starch of the rice, and egg protein. The rest lets all three firm up in the cold.

  3. Take egg-sized pieces, shape flat ovals, and coat them in flour then in beaten egg.

  4. Bring the oil to 170 °C and fry the meatballs three minutes a side.

    Why The 170 °C matters: below it the egg coating does not set at once and the meatball drinks oil; above it the coating burns while the raw mince inside is still raw.
    If it went wrong

    If the outside has coloured while the inside is raw, give them eight minutes at 180 °C: the frying is done and the oven only takes the centre to 72 °C.

For a child

The frying and the egg coating make these a favourite. For 12–36 months make them small and halve them, and cut the salt. Fried food does not suit a baby under one; bake a piece of the same mixture instead.
