Where this dish comes from

Squid muscle is built from cross-linked collagen fibres. Heat contracts them first — it starts to toughen within two minutes — and only over a long time does the collagen become gelatin and soften again. Every duration between five and twenty-five minutes guarantees rubber. Frying takes the first route: ninety seconds at 190 °C and onto the plate.

Method

Before the heat goes on
  • Cut the squid into 1 cm rings and dry it THOROUGHLY.
  • Mix the flour and cornmeal on a wide plate.

You will need: A deep pan · A slotted spoon · A thermometer, preferably

  1. Stir the crushed garlic into the yoghurt and put it in the fridge.

    Look for The yoghurt should be thick enough not to run.

    Why The sauce is made first because the squid has to be served the moment it leaves the pan — and while it waits the garlic settles into the yoghurt.

    Starch still asleep The granules are just floating there doing nothing. No body arrives before 62 °C.

  2. Salt the rings, turn them in the flour and cornmeal and shake the excess off.

    Look for A thin dry dusting on every ring.

    Why The wheat flour makes it stick and the cornmeal makes it crisp; neither is enough alone. If the squid is wet the coating pastes and slides off in the oil, which is why drying comes first.
    If it went wrong

    If the coating is damp, shake it off, dry them again and use fresh flour.

    Starch still asleep The granules are just floating there doing nothing. No body arrives before 62 °C.

  3. Bring the oil to 190 °C and fry the rings in batches for NINETY SECONDS.

    Look for Pale gold rather than dark, and the rings just curling without twisting into tight spirals.

    Why Ninety seconds is the last moment before the collagen fibres begin to contract. The 190 °C is needed too: at any lower temperature the squid cooks before the coating browns and the time stretches.
    If it went wrong

    If it has gone rubbery the only answer is the long road: drop the pieces into a tomato sauce and simmer them thirty minutes. The second phase begins and the texture comes back.

  4. Lift them out onto paper and serve AT ONCE with lemon and the garlic yoghurt.

    Look for Lay them on the plate without letting them stick together.

    Why The coating starts absorbing the squid’s own steam, and within three minutes the crispness is gone. Fried squid that waited is not as good as squid that was never fried.

What happened

The oil was not hot enough. Surface water never flashed to steam and never pushed outward, so no shield formed and the oil walked straight in.

By the numbers

Hold the oil at 170–190 °C. Do not crowd the pan; every batch drops the oil 10–15 °C, so let it recover in between.

Without a thermometer

Drop in a cube of stale bread: golden in 30–40 seconds means 180 °C. Dark in 15 seconds is too hot; longer than a minute is too cold. Or stand a wooden spoon handle in the oil — a steady stream of small bubbles around it means you are there.

Cooling and reheating

Do not reheat: a second heating certainly turns it to rubber.

Does not freeze

Not once cooked. Raw squid keeps three months, and frozen squid cooks more tender than fresh because the ice crystals break the fibres first.

What is left

Leftover squid simmered thirty minutes in tomato sauce goes tender again and becomes a different dish.

For a child

Squid is a mollusc allergen and its texture is hard for a small child to chew. Not recommended for 12–36 months. For a school-age child, halve the rings. On a first exposure, give it alone and in a small amount.
