Mushrooms are wiped, not washed. And the salt goes in last: early salt draws their water out and makes browning impossible.

A mushroom takes up water like a sponge — washed, it can gain 10% of its weight, and that water is the first thing to come out in the pan. Salt does the same by osmosis. Either way the pan locks at 100 °C and the Maillard reaction that produces the umami never begins. A mushroom tastes of something when it browns, not when it boils.
Method
- Do NOT wash the mushrooms: wipe them with a damp cloth and slice them thick.
- Heat the pan empty for two minutes.

Heat the pan hard, add the fats and lay the mushrooms in a SINGLE layer with no salt; leave them ALONE for six minutes.
Look for The water comes out first and the pan goes quiet; when it has gone the sizzle returns and the real browning starts only then.

Turn them and brown four minutes more, then add the garlic and thyme for one.
