Where this dish comes from

At home it is often called "bolognese", but bolognese is a ragù with milk that cooks for hours; this is the quick meeting of pasta with the Turkish kitchen’s paste-and-mince sauce. Its flavour comes from browning the mince.

Method

Before the heat goes on
  • Chop the onion fine and grate the tomatoes.
