Pasta with minced meat
A twenty-minute sauce of browned mince, paste and tomato. Letting the mince lose its water and truly brown is what keeps the sauce tasting of meat rather than boiled meat.

At home it is often called "bolognese", but bolognese is a ragù with milk that cooks for hours; this is the quick meeting of pasta with the Turkish kitchen’s paste-and-mince sauce. Its flavour comes from browning the mince.
Method
- Chop the onion fine and grate the tomatoes.
- Put the pasta water on to boil.

Brown the mince in the oil over high heat for 8–10 minutes: first it releases water, then the water goes and it starts to sizzle.
