Grilled sea bream

Where this dish comes from

Sticking happens because fish protein meets hot metal directly and coagulates onto it. An oiled, dry surface delays that contact, and once the protein has formed a crust it releases by itself — which means trying to turn the fish early is the real cause of sticking. Thirty seconds of patience beats a spatula.

Method

Before the heat goes on
  • Have the fish cleaned and slash it three times on each side.
  • Dry it THOROUGHLY: every drop on the skin means sticking.
  • Heat the grill hard and oil the bars.

You will need: A grill or a ridged pan · A fish clamp, preferably

  1. Dry the fish, rub it with oil and salt and put the thyme in the cavity.

    Look for The skin should feel glossy and dry, leaving no wetness on the finger.

    Why The oil forms a thin layer between the metal and the protein, and the salt draws the last surface moisture out to evaporate. Both do the same job.
    If it went wrong

    If the skin is wet, do not put it on the grill until it is dry: skipping this is how a whole fish welds to the bars and tears apart.

  2. Lay it on the hot grill and do not touch it for THIRTY SECONDS — then leave it alone for six minutes.

  3. Turn it once and give the second side six or seven minutes.

    Look for Pull the dorsal fin: if it comes out without resistance the fish is done.

    If it went wrong

    If it has stuck and torn, gather the pieces and lay them over the salad: the look suffers, the taste does not.

  4. Rest it three minutes. Toss the rocket, finely sliced red onion, sumac, lemon and oil and serve it beside.

What can go wrong here

The meat came out dry and tough
What happened

The meat passed 70 °C. Past that point the muscle fibres contract and wring out their water, while collagen never gets the time to turn into gelatine. It loses moisture and never tenderises.

By the numbers

Beef medium at 57 °C, chicken at 74 °C. Rest it for 10 minutes off the heat; unrested meat leaves its juice on the plate.

The palm test: touch thumb to index finger and press the pad below your thumb — that firmness is rare. Middle finger is medium, ring finger is well done. Watch the juice too: pinkish and clear means you are there, running white means you went too far.
