Grilled sea bream
Fish sticks to a grill because of its skin, not the bars: wet skin welds and dry skin releases in thirty seconds.

Sticking happens because fish protein meets hot metal directly and coagulates onto it. An oiled, dry surface delays that contact, and once the protein has formed a crust it releases by itself — which means trying to turn the fish early is the real cause of sticking. Thirty seconds of patience beats a spatula.
Method
- Have the fish cleaned and slash it three times on each side.
- Dry it THOROUGHLY: every drop on the skin means sticking.
- Heat the grill hard and oil the bars.
You will need: A grill or a ridged pan · A fish clamp, preferably
-
Dry the fish, rub it with oil and salt and put the thyme in the cavity.
Look for The skin should feel glossy and dry, leaving no wetness on the finger.
Why The oil forms a thin layer between the metal and the protein, and the salt draws the last surface moisture out to evaporate. Both do the same job.If it went wrong
If the skin is wet, do not put it on the grill until it is dry: skipping this is how a whole fish welds to the bars and tears apart.
Starch still asleep The granules are just floating there doing nothing. No body arrives before 62 °C.
Salt · 1.08% Right in the window. Flavours sharpen, bitterness retreats, water is held.
-
Lay it on the hot grill and do not touch it for THIRTY SECONDS — then leave it alone for six minutes.
Look for Nudged, it should slide as one piece; if it does not, it is not ready.
Why The protein coagulates onto the bar the moment it touches it, and after thirty seconds that layer becomes a crust which releases by itself. Interfering early leaves the crust on the grill.Starch gelatinised The granules soaked up water, swelled and burst into a network. It has thickened, and it will firm further as it cools. no way back
Maillard is running Amino acids have met reducing sugars. The crust, the roasted flavour and that smell all come from here. no way back
Frying dynamics Surface water is flashing to steam and pushing outward — that is the shield keeping the oil out. no way back

Turn it once and give the second side six or seven minutes.
Look for Pull the dorsal fin: if it comes out without resistance the fish is done.
Why A fish is turned once: every turn costs a crust and risks it breaking. A 400 g bream reaches 58 °C at the centre in thirteen minutes in all.If it went wrong
If it has stuck and torn, gather the pieces and lay them over the salad: the look suffers, the taste does not.

Rest it three minutes. Toss the rocket, finely sliced red onion, sumac, lemon and oil and serve it beside.
Look for Dress the salad as you serve it: dressed early, rocket weeps and wilts.
Why The rocket salad is not a garnish: the bitterness of the leaf and the acid of the sumac cut the fish’s fat, which is what a grilled fish wants.Salt · 0.74% Right in the window. Flavours sharpen, bitterness retreats, water is held.

What can go wrong here
The meat came out dry and tough⌄
What happened
The meat passed 70 °C. Past that point the muscle fibres contract and wring out their water, while collagen never gets the time to turn into gelatine. It loses moisture and never tenderises.
By the numbers
Beef medium at 57 °C, chicken at 74 °C. Rest it for 10 minutes off the heat; unrested meat leaves its juice on the plate.
Without a thermometer
The palm test: touch thumb to index finger and press the pad below your thumb — that firmness is rare. Middle finger is medium, ring finger is well done. Watch the juice too: pinkish and clear means you are there, running white means you went too far.
After the heat goes off
Hot, with the rocket salad and lemon, and bread beside it.
One day in the fridge, off the bone.
Do not reheat it: it is better cold.
Not once cooked.
The flesh off the bone goes into a salad or a sandwich.
Suitable from twelve months with the bones checked. For 12–36 months cut the salt, leave the sumac out and crush every piece with your fingers. For a baby under one, steaming suits better than grilling.

What it tastes like
The axes that define this recipe: aroma 77, bitter 34, sour 25.
This profile is computed rather than measured: the role-weighted average of its ingredients’ taste vectors, shifted by what the cooking does. The thin line is the database average on that axis.

Fish sandwich
Mackerel is an oily fish, and the whole recipe is about balancing that fat: onion, sumac, lemon.…

Baked salmon
The white stuff on baked salmon is a sign of too much heat rather than of freshness. Pulled at 52 °C it never appears.…
