What it is for

They give the character. Same technique, same ingredient, a different trio of spices — and the dish moves to another cuisine entirely. Most of their aroma molecules are volatile.

Where it catches you out

Volatile ones go in last, sturdy ones first. Mint and basil after the heat; bay and cinnamon right at the start.

The knack

Soy sauce is a salt: roughly 14 g of it per 100 ml, which makes one tablespoon about 2 g of salt. Adding soy sauce and then salting to taste is salting the dish twice.

Storage and health

How to keep it, and who it suits.

Keeping it

Unopened it keeps two years in the cupboard; opened, six months in the fridge, its aroma fading slowly. The salt keeps it safe — what it loses is flavour.

Contains gluten

Ordinary soy sauce is fermented with wheat. The gluten-free one is tamari, and it says so on the label.

Glycaemic index

This ingredient carries no meaningful carbohydrate, so it has no glycaemic index. On its own it will not move blood sugar; what you eat alongside it decides that.
