What it is for

They give the character. Same technique, same ingredient, a different trio of spices — and the dish moves to another cuisine entirely. Most of their aroma molecules are volatile.

Where it catches you out

Volatile ones go in last, sturdy ones first. Mint and basil after the heat; bay and cinnamon right at the start.

The knack

The bitterness in black tea is tannin, and tannin comes out with time rather than temperature: three to five minutes is the aroma, ten is the bitterness. Leaving the pot on the heat does not steep the tea, it boils it — the pot wants to sit at 90–95 °C.

Keeping it

One to two years in an opaque airtight tin. Tea absorbs smells: stored next to spices, within a month it tastes of them.

The leaf contains no gluten.

Glycaemic index

This ingredient carries no meaningful carbohydrate, so it has no glycaemic index. On its own it will not move blood sugar; what you eat alongside it decides that.
