Method

  1. Melt the butter over a low flame and crack the eggs in as soon as it foams.

Why Butter’s milk solids begin to burn at 150 °C, and eggs cooked in browned butter taste faintly bitter.

The egg is setting Too hot. The protein net over-tightened and pushed the water out: curdling and sponge. no way back

Stay under 82 °C. Lower the heat or move to a bain-marie — a split custard never comes back.

If you want a crust, do not stay under 140 °C. Food cooks at this heat but never colours.

  2. Cover the pan and give it three minutes: the white sets while the yolk stays liquid.

Why White sets at 62 °C and yolk at 65–70 °C; the lid cooks the top with steam without reaching the yolk.

  3. Salt it on the plate rather than in the pan.

Why Salt in the pan dissolves on the yolk, speckling it and pitting the membrane.

An emulsion is forming Lecithin is holding the fat droplets suspended in water. Add the fat slowly and you get a thick, glossy sauce.
