Fried eggs in butter
Eight minutes and one number: the butter must not pass 150 °C.
Method
-
Melt the butter over a low flame and crack the eggs in as soon as it foams.
Why Butter’s milk solids begin to burn at 150 °C, and eggs cooked in browned butter taste faintly bitter. The egg is setting Too hot. The protein net over-tightened and pushed the water out: curdling and sponge. no way back
Stay under 82 °C. Lower the heat or move to a bain-marie — a split custard never comes back.
If you want a crust, do not stay under 140 °C. Food cooks at this heat but never colours.
-
Cover the pan and give it three minutes: the white sets while the yolk stays liquid.
Why White sets at 62 °C and yolk at 65–70 °C; the lid cooks the top with steam without reaching the yolk. The egg is setting Too hot. The protein net over-tightened and pushed the water out: curdling and sponge. no way back
