Put the tahini in a bowl, pour the honey over it and start stirring.

It will seize at first. Do not stop: within half a minute it flows again.
Why The water in the honey briefly breaks tahini’s fat phase; stirring builds a new emulsion and the texture returns. -
Break the walnuts over it and finish with cinnamon.
