What it is for

They carry aroma. Most smell molecules dissolve in fat rather than water, which is why you bloom spices in oil. They also conduct heat, shorten gluten and soften texture.

Where it catches you out

Every fat has its own smoke point. Butter burns at 150 °C, extra virgin olive oil holds to 190 — choose the fat for the job, not the bottle.

The knack

Do not make it from salted butter: the water and milk solids leave but the salt stays behind and concentrates. Swapping it for butter by weight is not one for one — a sixth of butter is water and none of this is.

How to keep it, and who it suits.

Keeping it

In a closed jar somewhere cool and dark it keeps 3-6 months at room temperature, and over a year refrigerated. With the water gone it does not need the fridge the way butter does — though every wet spoon that goes into the jar takes that advantage back.

Ghee is pure milk fat and is naturally gluten-free.
