Sandwich loaf
The beliefA square sandwich loaf is assumed to be machine work, and a home attempt is expected to come out as a rustic round.
The truthThe square comes from the tin, not the recipe. A loaf tin with a lid makes the bread square.
How to make it
What you need
- 500 g flour
- 300 ml warm milk
- 7 g dried yeast
- 10 g salt
- 20 g sugar
- 40 g softened butter

| 500 g | Flour | flour |
| 309 g | Warm milk | milk |
| 7 g | Dried yeast | yeast |
| 10 g | Salt | salt |
| 20 g | Sugar | sugar |
| 40 g | Butter | butter |
An empty weight means that line could not be turned into grams — either the amount is open ("to taste") or the ingredient has no record here. Neither enters the sum as zero; they do not enter it at all.
Mix the milk, yeast and sugar and leave them ten minutes.
Add the flour and salt, knead eight minutes, then work the butter in and knead five more. The fat goes in last.
Let it rise for an hour, until doubled.
Roll the dough into a rectangle, roll it up and lay it in a greased loaf tin. Put the lid on if it has one.
Prove it 45 minutes, until it reaches the rim of the tin.
Bake at 190 °C for 30–35 minutes. The centre should read 96 °C; with no thermometer, the base should sound hollow.
Turn it out, cool it on a rack for at least two hours, then slice it.

Bread
The truthFlour, water, salt, yeast. Four ingredients and four ratios — what looks like craft is the ratios.
Pasta
The truthSemolina and water at 30% hydration. The rest is a rolling pin and a little patience.
Erişte noodles
The truthIt is egg dough rolled thin and cut. One person makes a winter’s worth in an hour — the crowd is custom, not technique.
