Pomegranate molasses

How to make it
What you need
- 2.5 litres of fresh pomegranate juice, about 5 kg of sour fruit
- A wide steel or enamel pan

An empty weight means that line could not be turned into grams — either the amount is open ("to taste") or the ingredient has no record here. Neither enters the sum as zero; they do not enter it at all.
Seed the fruit, pulse the arils briefly or crush them by hand, then strain through a fine sieve and a cloth. Do not break the pips: broken pips give bitterness.
Pour the juice into a wide pan. Width matters, because evaporation follows surface area: a narrow pan takes twice as long.
Simmer uncovered over low heat without stirring. Skim the foam in the first half hour — it carries sediment and leaves the molasses cloudy.
When it is down to a fifth, test it: drop a bead onto a cold plate and tilt it. Ready is when the bead moves slowly but does not run.
Take it off and jar it while hot. It thickens noticeably as it cools — if it already looks perfect in the pan, you have gone too far.
