  • 500 g flour
  • 250 ml warm milk
  • 1 egg
  • 7 g dried yeast
  • 10 g salt
  • 30 g sugar
  • 50 g butter
  • 1 egg yolk and sesame, for the top

  1. Mix the milk, yeast and sugar and leave them ten minutes.

  2. Add the flour, salt and egg, knead eight minutes, then work in the butter and knead five more.

  3. Let it rise for an hour.

  4. Divide into eight, roll each tightly into a ball, space them on a tray and flatten them gently with your palm.

  5. Prove them forty minutes, until they swell and almost touch.

  6. Brush with the yolk, scatter sesame and bake at 190 °C for 15 to 18 minutes.

  7. Cool them completely on a rack: cut warm, they go gummy.
