Tortilla

The beliefA tortilla is assumed to need a special Mexican flour that is not available here.

The truthA wheat tortilla is made with ordinary flour. What is special is not the flour but the solid fat in the dough.

What you need

  • 400 g flour
  • 240 ml hot water
  • 8 g salt
  • 60 g butter or lard
  • 1 teaspoon of baking powder

  1. Mix the flour, salt and baking powder, then rub the fat into the flour with your fingertips.

  2. Add the hot water and knead five minutes, to a soft, smooth dough.

  3. Wrap it and rest it twenty minutes.

  4. Divide into ten, and roll each to two millimetres and twenty centimetres across.

  5. Heat a dry pan over a medium-high flame and cook each side 30 to 45 seconds. Bubbles should rise; it should not brown.

  6. Stack them between clean cloths as they come off: their own steam keeps them flexible.
