Ghee
The beliefGhee is taken for a separate product, made in some way quite unlike butter.
The truthYou melt butter and take out its water and milk solids. What is left is pure fat, and it keeps for months without a fridge.
How to make it

- 500 g unsalted butter
- Muslin or a fine sieve
- A clean glass jar

An empty weight means that line could not be turned into grams — either the amount is open ("to taste") or the ingredient has no record here. Neither enters the sum as zero; they do not enter it at all.
Melt the butter in a heavy pan over low heat. Do not rush it: high heat burns the milk solids before the water has gone.
It will foam and crackle: that sound is the water boiling. Let it run without stirring, and skim the white foam from the surface.
When the noise stops, the water has gone. Now watch the solids at the bottom: take the pan off when they turn pale gold and it smells of hazelnuts.
Rest it five minutes, then strain it through muslin into the jar, leaving the brown solids behind in the pan.
Close the lid once it is cold. Ghee turns opaque and creamy as it cools — that is normal, not spoilage.

Yoghurt
The truthBesides milk you need one spoon of yoghurt. The rest is holding a temperature and waiting.
Butter
The truthIt is whipped cream taken too far. Around the fifteenth minute it separates on its own and you have both butter and buttermilk.
Labneh
The truthIt is strained yoghurt, and the only variable is time: six hours gives a thick yoghurt, twenty-four a cheese.
