Kadayıf pastry
The beliefKadayıf is assumed to be impossible without a special machine.
The truthKadayıf is a very loose batter poured onto a hot surface in fine threads. The machine does it fast; a hand does it slowly.
How to make it
What you need
- 200 g flour
- 300 ml water
- 1 g salt
- 1 tablespoon of cornflour
- Butter, for rubbing through afterwards

An empty weight means that line could not be turned into grams — either the amount is open ("to taste") or the ingredient has no record here. Neither enters the sum as zero; they do not enter it at all.
Whisk the flour, cornflour, salt and water until smooth. The batter should be thinner than crêpe batter — almost like milk.
Rest it twenty minutes and stir it again: the starch settles.
Heat a wide pan over a medium flame and do NOT grease it. On a greased surface the threads stick together.
Pour the batter through a slotted spoon, or a bag with a pinhole in the corner, moving fast over the pan to lay fine threads.
Give it 30 to 40 seconds, until the threads go matt and firm. They should not colour.
Lift them with a spatula onto a tray and let them cool. Wipe the pan between rounds.
Before use, rub melted butter through to separate the strands.
