An empty weight means that line could not be turned into grams — either the amount is open ("to taste") or the ingredient has no record here. Neither enters the sum as zero; they do not enter it at all.
Tear the bread into large pieces. Keep the crust: it makes a crunchier, better-coloured crumb.
Spread it in a single layer and dry it at 150 °C for 25 to 30 minutes. You want it dry, not coloured — browned crumbs burn when you cook with them.
Cool it completely. Warm bread steams in the grinder and the crumbs clump.
Blitz it: thirty seconds for fine crumbs, ten for the coarse, crunchy kind.
Sieve it into fine and coarse if you like: the fine for köfte and sauces, the coarse for frying.
