  • 200 g granulated sugar
  • 1 tablespoon of molasses or pekmez — one for light, two for dark

  1. Put the sugar in a wide bowl and trickle the molasses over it.

  2. Work it in with the back of a fork or with your fingers. It will clump at first — keep rubbing.

  3. It is ready when the colour is even and the texture is like damp sand — two or three minutes.

  4. Store it in a tightly sealed jar: left open it sets like a brick within a day.
