Whipped cream

The beliefCream whipped at home is assumed never to rise as high as packet whipped-cream powder, and to collapse quickly.

The truthCream doubles in volume if it is above 30% fat and whipped at 4–7 °C. The secret is cold.

How to make it

What you need

  • 200 ml cream, at least 30% fat, fridge-cold
  • 20 g icing sugar
  • Half a teaspoon of vanilla extract, optional
  • A metal bowl and whisk, chilled in the fridge for 15 minutes

  1. Chill the bowl and whisk in the fridge for fifteen minutes. Keep the cream in the fridge until the moment you use it.

  2. Pour the cream into the bowl and whisk at medium speed for a minute, until lines start to show on the surface.

  3. Add the icing sugar and vanilla and keep whisking. When lifting the whisk leaves soft peaks that curl over and drop, it is ready for topping a dessert.

  4. For piping or filling a cake, whisk 15–30 seconds more, until the peaks stand straight. Stop there.
