  • 1 teaspoon of bicarbonate of soda
  • 2 teaspoons of cream of tartar
  • 1 teaspoon of cornflour

  1. Mix the three in a dry, clean bowl. Both the bowl and the spoon must be dry: a single drop of water starts the reaction in the jar.

  2. Whisk or sift them together thoroughly. Uneven distribution means one part of the batter rises and another does not.

  3. Transfer to a tightly closing glass jar and write the date on it.

  4. Test it before use: a teaspoon into half a glass of hot water should fizz at once and vigorously.
