- 250 ml vodka or another neutral spirit at 35–40%
- A dark glass bottle

An empty weight means that line could not be turned into grams — either the amount is open ("to taste") or the ingredient has no record here. Neither enters the sum as zero; they do not enter it at all.
Split the pods lengthways and scrape the seeds out with the back of a knife, then put both the seeds and the pods in the bottle. Do not discard the pods: most of the aroma is in them.
Fill with spirit so the pods are fully submerged: any part exposed to air dries out and can mould.
Close it and keep it cool and dark. Shake it daily for the first week, then weekly.
Start using it after two months, when the colour is deep amber and the smell is dense. Three months is noticeably better.
Top it up with spirit as you use it. The pods keep giving for a year, and adding one new pod annually keeps the bottle going indefinitely.

Icing sugar
The truthIcing sugar is granulated sugar, ground. That is the entire difference.
Baking powder
The truthBicarbonate plus a dry acid plus starch. Three things, two minutes, all of them already in the kitchen.
Brown sugar
The truthWhite sugar plus molasses at 5–10%. Stir it with a spoon and you have brown sugar.
