  • 1 litre water
  • 25 g rock salt, non-iodised
  • Vegetables: cucumber, carrot, cabbage, chilli
  • Garlic, dill, 1 tablespoon vinegar

  1. Stir the salt into the water until it fully dissolves. 25 g per litre is exactly 2.5%.

  2. Pack the vegetables in tightly, tucking garlic and dill between them.

  3. Pour the brine until everything is submerged, then weigh the top down with a vine leaf or a clean stone.

  4. Close the lid loosely — fermentation makes gas and a sealed jar will burst. Two weeks at room temperature, then into the fridge.
