Garlic yoghurt
The beliefGarlic yoghurt is assumed to mean grated garlic stirred into yoghurt, with its harshness unavoidable.
The truthCrushing the garlic with salt and giving it ten minutes before it meets the yoghurt evens out the heat. Salt opens the cells and spreads the flavour.
How to make it

- 400 g strained yoghurt, 3.5% fat
- 2 cloves of garlic
- Half a teaspoon of salt

Peel the garlic and take out the green shoot in the middle if there is one: that part is the harshest.
Pound it with the salt in a mortar, or crush it on a board with the flat of a knife, until it is a paste.
Leave the paste ten minutes. The wait is what evens out the taste.
Whisk the yoghurt smooth in a bowl, stir in the garlic and taste for salt after five minutes.
