Chilli flakes
The beliefChilli flakes are assumed to be possible only by drying in the sun for weeks.
The truthChilli flakes dry overnight in a home oven at 50–60 °C. The real task is drying completely: a pepper that still bends is not dry.
How to make it
What you need
- 1 kg red chillies (a mix of sweet and hot, to taste)
- 1 teaspoon of salt
- 1 teaspoon of olive oil, optional
- Gloves

An empty weight means that line could not be turned into grams — either the amount is open ("to taste") or the ingredient has no record here. Neither enters the sum as zero; they do not enter it at all.
Put on gloves. Wash and thoroughly dry the chillies, pull off the stems, halve them lengthways and remove the seeds and white ribs.
Lay them cut side up on an oven tray without overlapping.
Set a fan oven to 50–60 °C, prop the door open with a wooden spoon and dry them 8–12 hours.
They are done when they snap crisply between your fingers; give any that bend another 1–2 hours.
Cool them completely and crush them into coarse flakes in a mortar or with short pulses of a processor. Rub with salt and oil if you like, then jar them.
