Salted crackers
The beliefCrackers are assumed to be factory work, and a home batch is expected to come out like a biscuit.
The truthA cracker is a very dry dough rolled very thin and dried out. The snap comes from the drying, not from the baking.
How to make it
What you need
- 250 g flour
- 75 ml water
- 60 ml olive oil
- 5 g salt
- Flaky salt for the top

An empty weight means that line could not be turned into grams — either the amount is open ("to taste") or the ingredient has no record here. Neither enters the sum as zero; they do not enter it at all.
Bring the flour, salt, oil and water together and knead for three minutes. The dough should be firm and smooth; it will not soften like bread dough.
Wrap it and rest it fifteen minutes.
Halve it and roll each piece between sheets of baking paper to two millimetres. The thinner it goes, the crisper it gets.
Cut it into squares and prick each square twice with a fork.
Scatter flaky salt over and press it in lightly.
Bake at 180 °C for 12 to 15 minutes, until the edges are gold.
Cool them fully on a rack. A warm cracker is soft: the snap arrives as it cools.
