Caramel sauce

How to make it

- 200 g caster sugar
- 60 ml water
- 120 ml cream, warmed
- 40 g butter
- A pinch of salt
- A heavy-based pan

An empty weight means that line could not be turned into grams — either the amount is open ("to taste") or the ingredient has no record here. Neither enters the sum as zero; they do not enter it at all.
Put the sugar and water in a heavy pan and bring them to the boil over a medium flame. From here on DO NOT STIR — swirl the pan instead.
Wash any sugar off the sides with a wet brush. A single crystal drying on the rim can turn the whole syrup to sand.
Wait until the colour is amber, the shade of dark honey; 180 °C if you have a thermometer. It takes six to eight minutes and the last thirty seconds go fast — do not leave the pan.
Take it off the heat and pour the warm cream in SLOWLY, whisking. It will boil violently, which is normal; cold cream makes the caramel seize into a rock.
Whisk in the butter and salt until smooth and pour it into a jar.
