An empty weight means that line could not be turned into grams — either the amount is open ("to taste") or the ingredient has no record here. Neither enters the sum as zero; they do not enter it at all.

  1. Put the yoghurt in a wide bowl, scatter the salt over it and whisk it smooth. Added with the water, the salt never distributes evenly.

  2. Add the water gradually while whisking. All at once leaves lumps and a grainy drink.

  3. Whisk hard for a final minute: this is where the foam comes from. A hand whisk works, it just takes more effort.

  4. Serve at once. The foam collapses within fifteen minutes and the drink starts to separate within half an hour.
