Poached eggs on garlicky yoghurt, finished with butter sizzled with chilli. Three temperatures stacked: warm yoghurt, running yolk, scalding fat.
Pasta with tomato paste
There is no sauce until the paste has been fried: raw paste stays sour and metallic.
